How to Cook Without Wheat or Sugar

Are you allergic to wheat? Need to stay away from sugar? Now you can enjoy the sweet life without sacrificing good taste. By using rice flour, you can learn to bake delicious cakes, cookies, pies, and much more. Rice flour is a dry bland flour and does not rise very well. If you understand this, you can learn to use it and make some delicious baked foods. Rice flour requires a lot of extra liquid be added to a recipe. When trying to make breads, donuts, biscuits, etc., it is helpful to add a half to 1 whole teaspoon of Xanthum Gum to the dough. Xanthum Gum takes the place of gluten, found in wheat flour, and helps the dough to stick together. Use it in all of your goodies and it will add moisture as well. Be careful not to use too much gum or your confections will become doughie in the middle. Also, when cooking with rice flour, be sure and reduce your baking time. Rice flour seems to cook faster than wheat flour.

For the sweetener, use Splenda. It is the one artificial sweetner that does not leave a bitter after taste. If you are not allergic to honey, try adding a tablespoon of honey to each recipe. It will smooth out the flavor and also add more moisture to what ever you are baking.

Hi Diana.   I am from the Philippines and we use rice flour in all kinds of dessert, rice cakes and rice muffins are very popular and we use unprocessed brown sugar instead of the white refined sugar. Thanks for sharing. ~Nenita~
